We love dill pickle soup! If you prefer to try dill pickle soup before you make it, you can try it at the Westsider cafe located on Walker Avenue. there are a lot of ways to make dill pickle soup the below is one of our favorites.

Another EASY way of making dill pickle soup is to buy a potato soup mix like Bear Creek or Shore Lunch, prepare as directions say, and add your shredded dill pickles and other ingredients listed below to taste.

2 tablespoons butter
1 onion, halved and sliced
4 cups chicken or vegetable broth
2 cups chicken (optional)
4 large dill pickles, about 3 cups or so chopped
2/3 cup pickle juice
4 large potatoes, peeled and cut into 1/2-inch cubes
2 tablespoons all-purpose flour
1 cup sour cream
Salt and pepper
Sugar to taste (optional)

Cooking Instructions

Melt butter in a large pot.

Saute onion until translucent, about 3 minutes.

Add broth, pickles, pickle juice and potatoes. Bring to a boil, reduce heat and simmer until potatoes are tender, about 20 - 30 minutes.

Blend flour with sour cream together. Add this into hot soup, whisking constantly until it comes to a boil.

Reduce heat to low and simmer 3 - 5 minutes or until soup slightly thickens.

If you like your soup chunky you're good to go. If you'd prefer less chunky get out the old trusty potato masher gently mash and stir until your desired consistency is achieved.

Adjust your seasoning, adding sugar if desired.

Serve in warmed bowls!
