Fresh applesauce is awesome. We use gala's or Fuji's preferably. The ingredients in the instructions below are really just a guide, everyone has their own favorite way of making applesauce to their liking. It's definitely a healthy pastime making applesauce and experimenting with different ingredients and methods.
6 or more medium apples
1/4 cup lemon juice
1/4 cup water (optional)
1/4 cup or more brown sugar, and or honey, raw sugar etc.
1 tsp cinnamon (optional)
Cinnamon goes a very long way in applesauce add it moderately and keep checking the taste.
Peel and core apples.
Cut into chunks.
Place apples in a Dutch oven.
Add lemon juice, water, sugar (and cinnamon if using).
Cook on medium heat covered for 15 minutes, then on low for another 10 minutes, or until apples are soft.
Mash with a potato masher.
For a smoother texture, use a blender, and add more water or a little apple juice to suit.
