2 pounds round steak, cut 1/4 inch thick
3 tbsp prepared mustard
1/4 cup finely minced onion
4 strips bacon, cut in half
1 large dill pickle, cut in 8 lengthwise strips
2 tbsp flour
1 1/2 teaspoons salt
1/8 teaspoon pepper
3 tbsp cooking oil
1 8-ounce can tomato sauce
1 teaspoon Worcestershire sauce
1 teaspoon beef flavor gravy base
1 cup hot water
1 teaspoon brown sugar

Cooking Instructions

Cut meat in 8 rectangular pieces; spread mustard on meat to within 1/2 inch of edge. Sprinkle with onion. Top with half strips of bacon and with pickle strips. Roll up jelly-roll fashion, tucking in edges. Tie with heavy cord, or skewer. Combine flour, salt, and pepper; coat rollups with mixture and brown slowly on all sides in hot oil. Combine tomato sauce, Worchestire sauce, beef gravy base, hot water, and brown sugar; pour over meat. Cover and simmer for 1 1/2 hours. Mustard , onion, bacon, and dill pickle are sealed inside and flavor meat as it simmers. To serve: remove meat from sauce and thicken sauce with a little flour-water paste. Cut cord from meat and place beef rolls on large serving platter. Pour some sauce over beef rolls and serve remaining sauce as gravy over buttered noodles.
