1/2 cup olive oil
1 frying chicken cut in serving pieces
1 small onion, chopped
1 clove garlic, minced
1/4 cup tomato sauce
3 chicken bouillon cubes dissolved in 2 1/2 cups of water
salt and pepper
1 cup uncooked rice
Heat oil, brown chicken on both sides. Add onion and garlic, fry a few minutes, then add tomato sauce, chicken broth and salt and pepper. Cover and cook for 20 minutes. Brown regular uncooked rice (possibly 1 1/4 or 1 1/2 cups) in 2 tbsp of olive oil. When the rice is golden brown add to chicken mix. Stir well, cover and simmer for 30 minutes or until all the liquid has been absorbed and the chicken is tender. Serves 4-6Recipe Pictures - Hover cursor to scroll if several images:
